Chicken, Crockpot


In my infinite wisdom I had decided to pass along my awesome crock pot to my daughter who was moving away…. True to form I decided I could not live without it after all an got a new one. Over the weekend I decided to make a recipe I had found that I thought sounded tasty. IT WAS SOOOO GOOD. I will for sure make it again however I will use more of the pickled Jalapenos and add garlic and onions. I DETEST mushrooms but for those odd people who love them, this would probably be a tasty addition.


This is seriously the most ridiculously easy recipe ever.

Add desired amount of chicken breasts to crock pot, add 1 cup of water and 1 jar drained pickles jalapenos. I added some chopped onion and garlic as well. Cook for 5 to 6 hours. Remove chicken, cover with foil and keep warm in oven. I strained the broth through a screen sieve. Pick out peppers and dice, add back to broth. Add 2 8oz packages of cream cheese (I used non-fat and you could not tell) to broth mixture, stir until completely mixed.

In a saucepan I cooked spinach tortellini (I used Trader Joe’s they are the bomb). Cover chicken and tortellini with desired amount of “gravy”. The original recipe called for the gravy to be thickened with flour, I chose to not do this and it ended up thickening a bit on its own. Crumble bacon on top and serve hot. SO DELICIOUS.
