I LOVE LOVE LOVE soup and the best thing about making a huge batch is it freezes great. I pre-measure and bag and freeze. If you are just starting the 21 Day Fix it can be overwhelming to think of your food. It is also a bit of a learning curve to figuring out container counts when food is mixed together. Of course my measurements are not exact but I do think they are close enough to be called good. If you are worried about it you can also make the base or broth and then add using your containers the veggies, meat and beans if you use them. Keep in mind that tomatoes that are canned or tomato juice if has added sugar counts as a purple.
For 1 cup of soup I count 1/2 G 1/5 P 1/2 R 1 Y
This makes a huge pot and is a crockpot recipe but I made it start to finish in less than 15 minutes on the stove top! Since I eat predominately vegetarian I do not use meat but it is great with it added. Also if you cook on the stove I suggest bringing to a boil, turn down to a simmer and only cook until the veggies are al dente then when you thaw and reheat they will not be mush!
2 pound extra lean ground turkey or chicken
1 medium onion, diced
4-5 cloves garlic, minced
1/8 cup oregano
1 of each- yellow, red, orange & green peppers, diced
2 cups frozen green peas
2 cups frozen corn
2 cups frozen black eyed peas
2 cans beans rinsed
4 cups low sodium/no salt chicken or veggie broth
1 large can no or low sodium tomato juice
2 can diced no salt low salt tomatoes
2 tbsp tomato paste
2 tsp cracked black pepper
1 tsp pink Himalayan salt
I found that adding a jar of healthy salsa gives it amazing flavor.
Brown your ground turkey with the onion, and minced garlic over medium heat until cooked thoroughly. Once chicken or turkey is cooked place all ingredients in your crockpot. Cook on high for 3-4 hours.
